Grilled Salmon with a Lentil Salad



A recipe that I found on Sainsbury's. It's so simple to make but so tasty. The combination of spices in the lentils, the sweet chargrilled peppers and the crispy but flaky salmon was to die for. I'd make this again in an instant and, because it was so easy to make, I don't even think I'd need the recipe again. 

Like you're able to with most recipes, you can make this your own. If you don't want/like salmon, you could substitute it for chicken or even get rid of that and make it vegan. You could add some additional spices to the salad or add whatever veggies you think could work. Maybe some grated carrot or shredded cabbage? This recipe is also great for students, as it's easy and there aren't many recipes to it's very cheap too. It looks amazing and will have everyone wanting more!



Recipe: (Serves 4)

  • Olive oil
  • 1 salmon fillet for each person
  • 1 medium brown onion, finely diced
  • 300g tenderstem broccoli (I cut the thicker ends off to make them shorter)
  • 2 packets cooked puy lentils 
  • 1 jar of cooked, chargrilled peppers, cut into strips
  • 4 tbsp balsamic glaze

Method:

  1. Fill up a medium saucepan with boiling water and cook the broccoli for 4 minutes. Remove from the heat and refresh under cold water (this stops the cooking process).
  2. Preheat a grill to high and place the salmon fillets onto a piece of foil on the grill/baking tray and cover each side with a little bit of oil and some cracked black pepper. Grill for 8-10 minutes until cooked, and crispy.
  3. Meanwhile, fry off the onion for about 5 minutes until it goes soft, then add the lentils and cook for a further 2 minutes. Add the cooked broccoli and mix. Remove from the heat and stir in the peppers, balsamic glaze and a little bit of salt & pepper to taste.
  4. Spoon the lentil salad onto a plate and top with the grilled salmon. Drizzle more balsamic glaze on top if you would like more. Serve & Enjoy!
